Taco Tuesday (Soup)

Slow cooked. Spicy. Super easy. SOOOOO GOOD!!

As the weather grows colder I like to make soups that are hearty, healthy and warming. This slow cooked chicken Taco soup packs a punch and is easy to make:

What you'll need:

  • 4 skinless organic chicken thighs

  • 1 tsp ground coriander

  • 1 tsp good salt

  • 2 habanero peppers

  • handful of cilantro

  • 1/2 cup rice rinsed

Let's get cooking:

  1. In a dutch oven sauté onion and garlic with 1/2 tsp salt and 1 tbsp olive oil until golden brown.

  2. Add chicken thighs and sear until brown.

  4. Add water, rice, lime slices and cilantro. Reduce to simmer and cover. Cook for 2 hours.
