This strawberry caprese salad is a light, lively and zesty alternative to a traditional caprese salad, and it’s perfect for summer parties.
Let's get cookin' strawberry caprese salad
2 handfuls strawberries (roughly 200g) chopped
Handful fresh basil chopped
Balsamic vinegar to drizzle
Pinch of sugar
1 - 2 large balls of mozarella
Olive oil to drizzle
Combine strawberries and basil in a bowl, add sugar, drizzle with balsamic vinegar and season with a generous crack of black pepper, then set aside to macerate for a few minutes.
Meanwhile slice mozarella and lay on plate.
Top with macerated strawberries, drizzle with lots of olive oil, season with a little salt and more black pepper.
