This high fiber protein banana bread is so yummy AND healthy that you could have it for breakfast!☕️
A slice or 2 with a nutrient dense smoothie will keep you full and satisfied for 3 - 5 hours😱
Protein banana bread ingredients:
🍌2 puréed/mashed bananas
🧠2 Tbs ground flax & chia (or purée 1 Tbs of each with your bananas in a processor)
🥥1 Tbs melted coconut oil
🥭1/2cup monk fruit
🌾1 cup organic oats
🥞1 cup GF pancake mix
💪2 scoops protein powder
🧂1/2 tsp salt
🎃2 tsp pumpkin pie spice (or 1 tsp cinnamon and 1/2 tsp each nutmeg and ginger)
🍫Chopped dark chocolate or chocolate chips (optional)
*You may need to add a little more water/milk depending on the flour or pancake mix you use. It should be a thick bread batter consistency.

Pre-heat oven to 375 degrees fahrenheit, and grease and line a loaf tin.
Combine bananas, egg, flax, coconut oil, and monk fruit; then add rest of the ingredients and mix.
Pour into baking tin and top with optional dark chocolate chips.
Bake for 30 - 40 minutes until a fork or toothpick comes out clean.
