This is such an easy way to amp up the protein in your avo toast, and it only takes a few quick minutes to throw together.
Top with an egg and/or feta or Parmesan for extra protein and extra zhuzh.
Pea and avo smash recipe
Mash together 1/2 cup defrosted baby peas and 1 avocado. Stir through juice of 1/2 a lemon and handful of fresh herbs of choice.
Mint and coriander are my favs!
Season with salt and pepper to taste, then top sourdough toast or crackers, drizzle with olive and balsamic vinegar, and sprinkle with chilli powder/flakes.
This is a super healthy and refreshing breakfast, lunch or snack.
TIP: Pea and avo smash also makes for a great dip!
