An easy warm salad packed with protein and fiber, that you can make an abundance of to keep in your fridge as meal prep👏
Warm salad ingredients:
For the salad:
Medium butternut squash chopped
Couple of beets chopped
Can of garbanzo beans
Olive oil
1 tsp Paprika
1 tsp Cumin powder
1/2 tsp Garlic powder
3 Tbs Pumpkin Your choice of nutrient dense salad greens like watercress, arugula, or baby spinach
Feta (optional)
For optional tahini dressing:
1/4 cup olive oil
1/4 cup tahini
3 Tbs apple cider vinegar
1 Tbs maple syrup/honey
2 tsp Dijon mustard
1/2 tsp salt
Let's get cookin'
Pre-heat oven to 375 degrees Fahrenheit.
Coat butternut, beets and garbanzo beans in a generous amount of olive oil, season with spices and salt and pepper, and roast on a large baking tray in the oven.
While veggies are roasting, whisk dressing ingredients together and set aside.
10 minutes before removing veggies from oven, sprinkle pumpkin seeds on top of veggies to roast.
Combine roast veggies with greens and dressing, and top with optional feta.
