This lazy chicken fajita traybake is a super simple "one pot" meal that's as tasty as it is easy. Plus it's really balanced with the beans, pepper, spinach, and salsa providing so much fiber and nutrients, and the succulent chicken thighs providing a punch of protein.
Chicken fajita traybake ingredients
1 red onion sliced
1 red pepper chopped
1 yellow pepper chopped
1 green pepper chopped
4 cloves garlic crushed
1 can red/kidney beans
3 - 4 boneless chicken thighs chopped
1 jar salsa or tomato purée
1 tsp cumin
1 tsp coriander
1 tsp paprika
1 tsp oregano
Salt and pepper
3 - 4 handfuls baby spinach
Let's get cookin' chicken fajita traybake
Combine all ingredients in a baking tray.
Place in 375 Fahrenheit oven for 45 minutes.
Stir through baby spinach and return to oven for 5 more minutes.
Eat as is, or serve with tortillas/rice and guac.
