Just a few ingredients for a quick, delicious meal that will fill you up without the bloat!
1 LB ground lamb
1/2 yellow onion diced
2 tbsp cumin
1 tbsp Kinder's Woodfired Garlic seasoning
1 tsp garlic powder
1/2 tsp each good salt & ground pepper
2oz organic tomato paste
1 tsp olive oil
1 head organic iceberg lettuce (or romaine)
Red pepper flakes (optional)
Organic sour cream or goat cheese
Fresh mint & lemon wedges

In a medium/large pan saute onion in olive oil over medium heat. When browned, add in lamb to cook.
While cooking, mix in tomato paste and all seasoning.
Create 6 lettuce wraps or boats, and set aside.
Chop 2 cups of lettuce and toss with sour cream (or goat cheese), chopped fresh mint and a little lemon juice.
Use slotted spoon to place spiced lamb into wraps and top with the lettuce, mint, cream/cheese mixture. Squeeze a little extra lemon before eating! Enjoy!
