Picture this - it’s a hot summer’s day, you’ve got guests around, you’ve already prepared and eaten lunch, and now you’re tired, full, and overheated from spending time in the kitchen.
Post lunch, someone with a sweet tooth pipes up “So what’s for dessert??”
The LAST thing you want to do is go bake up a cake or something🙄
This 4 ingredient blender healthy mango ice cream!🥭
It’s so creamy, smooth, and delicious; plus it’s minimal effort.
I freeze my own mango for this because that way I know the mango is ripe and sweet, but you could use store bought frozen mango too.
4-ingredient healthy mango ice cream recipe:
Blend 300g frozen mango with 1/2 cup unsweetened Greek yogurt, (MUST be Greek!) 2 Tbs honey, and juice of half a lime.
Do a taste test and add more honey or lime according to taste if needed.
You could eat it straight out of the blender in its smoothie bowl texture glory, OR if you want scoopable ice cream, lay it thin and flat in a tin and freeze for at least 1hr.
Creamy, dreamy, mango heaven!
Top with coconut and mint for a little extra pizzazz.
